This is one of our favorites. It's a bastardization of a recipe from an old Armour's MEAT Cook Book. Serve with mashed potatoes. Enjoy:
1 lb ground turkey
1/2 c dry bread crumbs
1 egg
1/2 c milk
1/2 c chopped bell pepper (any color, we like orange)
1/2 c chopped onion or celery (or both)
1 c shredded cheddar, divided (I frequently use cheddar blends)
dash of celery salt
dash of paprika (optional)
1. Preheat oven to 350
2. Mix all ingredients, but reserve 1/4 c cheese.
3. Shape into loaf in loaf pan.
4. Bake for 45 minutes.
5. Top with remaining cheese, bake for 10 additional minutes.
6. Eat.
